Creamy mushroom & spinach pasta

Ingredients

  • 1 small onion, finely chopped
  • 150g baby mushrooms, halved
  • 150g tagliatelle
  • 2 garlic cloves, crushed
  • 200g low-fat crème fraîche
  • 15g parmesan or vegetarian alternative, grated=
  • 120g baby spinach
  • ½ tsp chilli flakes (optional)

Instructions

  • Prepare the Base: Fry the onion and mushrooms for 10 mins in oil.
  • Cook pasta according to package
  • Add Garlic to mushrooms, cook for another 2 mins and then add cream fresh bullshit and baby spinat
  • Once pasta done (keep some water), add to mushrooms and cook on low for another 5 mins
  • Add pasta waterto loosen things up
  • Serve with black pepper, finish with chili flakes and cheese
