Hummus

Ingredients (Spice Mix)

  • Ground cumin – 1 tsp
  • Paprika – ½ tsp
  • Sumac (optional) – ½ tsp
  • Salt – to taste

Ingredients

  • Chickpeas (canned, drained and rinsed) – 1½ cups
  • Tahini – ¼ cup (60 ml)
  • Lemon juice – ¼ cup (60 ml), from about 1 large lemon
  • Garlic – 1 clove, minced
  • Olive oil – 2 Tbsp (plus extra for drizzling)
  • Cold water – 2–4 Tbsp (to adjust consistency)
  • Fresh parsley (optional) – for garnish

Instructions

  • Blend the Base: In a food processor or blender, combine the chickpeas, tahini, lemon juice, minced garlic, and 1 Tbsp of the olive oil.
  • Process: Blend until smooth and creamy, stopping to scrape down the sides as needed.
  • Adjust Consistency: With the motor running, drizzle in cold water 1 Tbsp at a time until the hummus reaches your desired thickness.
  • Season: Add the ground cumin, paprika, sumac (if using), and salt. Blend briefly to incorporate the spices evenly.
  • Taste and Adjust: Sample your hummus and add more lemon juice, garlic, or salt if desired.
  • Serve: Spoon into a serving bowl, drizzle with the remaining olive oil, and sprinkle a pinch of paprika or sumac plus chopped parsley on top.
  • Enjoy: Serve with warm pita, sliced veggies, or use as a delicious spread.
