Hummus
Ingredients (Spice Mix)
- Ground cumin – 1 tsp
- Paprika – ½ tsp
- Sumac (optional) – ½ tsp
- Salt – to taste
Ingredients
- Chickpeas (canned, drained and rinsed) – 1½ cups
- Tahini – ¼ cup (60 ml)
- Lemon juice – ¼ cup (60 ml), from about 1 large lemon
- Garlic – 1 clove, minced
- Olive oil – 2 Tbsp (plus extra for drizzling)
- Cold water – 2–4 Tbsp (to adjust consistency)
- Fresh parsley (optional) – for garnish
Instructions
- Blend the Base: In a food processor or blender, combine the chickpeas, tahini, lemon juice, minced garlic, and 1 Tbsp of the olive oil.
- Process: Blend until smooth and creamy, stopping to scrape down the sides as needed.
- Adjust Consistency: With the motor running, drizzle in cold water 1 Tbsp at a time until the hummus reaches your desired thickness.
- Season: Add the ground cumin, paprika, sumac (if using), and salt. Blend briefly to incorporate the spices evenly.
- Taste and Adjust: Sample your hummus and add more lemon juice, garlic, or salt if desired.
- Serve: Spoon into a serving bowl, drizzle with the remaining olive oil, and sprinkle a pinch of paprika or sumac plus chopped parsley on top.
- Enjoy: Serve with warm pita, sliced veggies, or use as a delicious spread.
