Hungarian Goulash Soup (Gulyásleves)
Ingredients

Beef & Base
- 500–700g stewing beef or white beans for veggie.
- 2–3 garlic cloves, minced
- 2 tbsp tomato paste

Spices
- 1.5 tbsp sweet Hungarian paprika (normal paprika works in a pinch)
- 1 tsp caraway seeds (less important)
- 1 bay leaf
- Salt & pepper to taste
- White pepper

Vegetables
- 1 large onion, sliced
- 2 carrots, sliced
- 1 parsnip, sliced (optional but traditional)
- 1 green bell pepper, diced
- 2 medium potatoes, diced

Liquid
- 1–1.2 L beef broth or water
Instructions
- Cook the base: In a large pot, heat the oil and all vegetables (except potatoes). Cook until soft, with a nice bite. If you’re using beef add here as well.
- Activate aromatics: Add garlic, cook until fragrant (2mins)
- Activate Spice: Push everything off to the side of the pan, add more oil to blank side, increase heat, add spices into oil and activate them.
- Make broth: Add beef broth, add potatoes. Light boil until potatoes cooked.
- Finish: Add while beans, season with salt, pepper and white pepper to taste
