Spicy Soy Chunk Stir-Fry
Soy chunks are extremely high in protein, providing over 50 g per 100 g of dry weight, making them one of the richest plant-based protein sources.
There’s also some bullshit nonsense available on the internet saying soy is high in estrogen, unless you’re a fucking plant this isn’t actually available to you. What is hyper available: all the hormones they put in meat animals.
Ingredients
- 50 g dried soy chunks
- 2-4 tbsp vegetable oil
- 1 small onion, sliced
- 1 bell pepper, chopped
- 1 small carrot, julienned
- 1 head of broccoli
- 2–4 cloves garlic, minced
- 1 tbsp soy sauce (low sodium)
- ½ tsp chili flakes
- Salt & pepper to taste
- Optional: Sesame seeds. I used wasabi flavored.
- Optional: Coriander for garnish
- Optional: ½ cup cooked quinoa or brown rice
Instructions
- Rehydrate Soy Chunks: Soak soy chunks in hot water for 15–20 min, squeeze out excess water.
- Fry Soy Chunks: Heat oil in a pan, drop in soy chunks and brown. Remove from pan.
- Sauté Veggies: Reduce heat, cook onion and garlic until translucent in oil.
- Cook Vegetables: Add bell pepper, carrot, and broccoli; increase heat and stir-fry until veggies have a nice bite.
- Add Soy Chunks & Seasoning: Mix back in soy chunks, soy sauce, chili flakes, salt, and pepper; cook on high for another minute.
- Serve: Garnish with fresh coriander. Serve over quinoa or brown rice.
